I’ll be the first to admit that I have a sweet tooth, I always have and always will. Anything with chocolate? Sign me up. Cookies, brownies, muffins – I’m here for it. One of my biggest goals for myself (and now as a mama to a toddler) is to make healthier versions of the sweet treats I love. This past spring, I stumbled upon Jeanette Ogden’s (Shut the Kale Up) Salted Chocolate Banana Bread recipe - https://www.shutthekaleup.com/home/salted-chocolate-banana-bread She always has BOMB recipes, but I knew I needed to make a few allergen and diet friendly tweaks to it in order for it to work for us.

 I’ve linked the original recipe above and am going to share my version below. I made a gluten free, vegan version (no dairy or eggs). It’s seriously the BEST banana bread recipe I’ve found. I have made it so many times, its engrained in my brain. As I’ve mentioned before, I do a lot of eyeballing when it comes to recipes. Feel free to do the same with this one and make it yours!



- 1 ½ cup gluten free flour (I use Bob’s Red Mill Oat Flour - https://amzn.to/3qtqwDu)
- 1 tsp vanilla extract (I use Simply Organic - https://amzn.to/3g9CQ74 )
- ¼ cup dark chocolate or semi-sweet morsels (I use Enjoy Life Foods - https://amzn.to/36BFtLQ)
- 1/3 cup melted coconut oil
- ¼ cup organic maple syrup
- 3 medium, ripe bananas
- 1 tsp baking soda
- 1 flax egg
- sea salt
- Other topping options: dark chocolate nibs, nuts

- Preheat your oven to 350
- Cut and mash bananas in a mixing bowl
- Add the flax egg and whisk together
- Add the rest of the ingredients and mix well
- Line your loaf pan with If you care wax paper (https://amzn.to/39CRr9X ) OR spray pan with coconut oil to prevent sticking
- Pour the batter into pan, put into the oven and bake for 40 minutes (I always check in intervals because I truly believe it all depends on your oven. So, for example, I check at the 20-minute mark)
- To check readiness, stick a toothpick in loaf (if nothing comes out on it, your bread is ready – it will also have a golden hue to it)
- Add toppings (optional) and serve warm
